My dual G4's HD is starting to make noise I don't like. I'de like to replace the HD. The Original is an IBM ATA66 30 Gig HD, can I replace that with a UDMA100 disk ?

Yes, UDMA and ATA are the same. You should get a 120GB drive or smaller for your ATA/66 bus. Otherwise, if you get a large drive like 200GB, you'll only be able to use the first 128GB. To work around that you need an ATA/133 PCI card.
