Bought new 64gb iPod Touch - how to clone old iPod data?

I just purchased a 64gb iPod Touch and now need to copy the contents (music, videos) off of my old 5th generation iPod Video to the Touch.

What is the best/easiest way to do this in OS X?
Mac Mini C2D 1.83/1/80/10.5.5
iMac G4 20" Superdrive 1.25/1.25/80/10.4.9
iBook G4 12" 1.33/512/40/10.4.9
iPod Video 30GB / Shure e4c Earbuds

Backup the old iPod to your Mac and then restore the backup to your new iPod.

Lots of third party software can do it for you. for example Joboshare iPod Rip for Mac, 3herosoft iPod to Computer Transfer for Mac, Joboshare iPod Rip for Mac.
By using these software, you can transfer all your video, audio, photo files from your iPod to your Mac, and then transfer them to your iPod touch.

iTunes is more of a one-way sync of media though it does sync playlist information (e.g. play count, song ratings, etc.) back to the computer. Noy sure why the OP doesn't want to use iTunes unless it's not his/her iPod
