I just bought an iPod nano, which I immediately set to sync up the images from several folders, it also includes the full resolution ones (incase i want to edit them on another machine). However I haven't found an easy way to add photos and have them show on the screen. If I add the folders under itunes > preferences > ipod it deletes the folders i set in the first place. I'd really like to just add more pictures, and be able to preview them on my ipod as well.

How can I do this? If it can't be done is there any 3rd part application you can recommend?

Yeah, why can't apple convert these images to something smaller on the fly? They can convert music to 128 Kbs for the Shuffle on the fly - but not images for the nano? Go figure.

I just added all photos in the last 12 months. Very easy, and kept it to less than 350 MB.

They are resized on the fly, maybe you just didn't notice? You also have the option in itunes to check include "full resolution" but it still resizes and them for faster viewing, didn't you notice this when itunes was uploading your photos it said "optimizing photos..." it does it very very fast on each image
