That's exactly how it's supposed to work. Is your iPod set to sync with the Mac?

Well for me, it just works. My ratings transfer from the iPod to the Mac. I'm not certain what the exact requirement are for this to happen, but I'd guess that the iPod needs to be paired with your Mac.

When you plug the iPod in, look under Preferences and click on iPod. The iPod will either be set to automatically sync or manually sync. If it's set to auto I expect the ratings to take care of themselves. If it's set to manually sync, then I'm not so sure.

If it's manual, or semi-manual, then your answer is no. If you have auto-sync, they will be copied back to the computer.
