The opening menu upon start, and everything
else is in Japanese. Is there a setting to convert
the menu language into English? thanks!

assuming the menu on yours is the same as my first-generation, from the main menu choose:

設定　＞　言語　＞　English

My sister had the same problem with her HP iPod... came out of the box in Chinese. After bouncing around to 3 different people at HP tech support one of them knew the menu order to get it to English.
