Someone gave me a used iPod for some Photoshop work I did for her. Is there a way that I can change
the name that comes up in iTunes, like to give it my own name?

Have you tried just clicking it in iTunes and changing it? That works on the Mac.

Otherwise launch the iPod software updater and restore the whole thing. That will remove all personalisation (and the music)
