For an iPod video:

1.) To output to a TV (and look nice) do you have to check the option "include hi-res photos" or is just a standard transfer ok?

2.) Is there any way I can dump the contents of my 1GB flash from my Canon 20D onto the iPod, (as a temp storage space) ?

High res photos are just for if you want a copy of the actual photo on the iPod's hard disk (for giving someone a copy, for example). They aren't used by the iPod itself.

You can get the iPod camera connector. I don't know if that particular camera is supported for a direct connection to the iPod, but apparently if you get a USB 2 card reader and connect it to the connector you can copy the contents of a card to the iPod pretty quickly.

so to view photos on a TV, it would display the lower quality ipod version?

There are several resolutions transferred to the iPod, as I understand it. One would be for thumbnails, one is for viewing on the iPod, and one is for viewing on the TV. TVs don't have that high of a resolution, so using the full res of a 4 or 5 megapixel camera would be overkill.
