iPod updater. It gives you two options: to update or restore. Restore returns the iPod to factory condition, with a "blank" hard drive and everything.

Download the software from here:

http://www.apple.com/ipod/download/

Plug in your iPod, run this software, and it will reformat your iPod to what it was when you first got it.
