Well I've had my 30gb video iPod since Christmas, and it's been great. However, about a week ago it locked up while I was watching a video, so I held down MENU + SELECT to restart it. Then everything worked fine - except for the shortcut where you hold down the MENU button to make the backlight to on/off. When I hold it down it just returns me to the main menu..? I didn't change any settings, just restarted it.
I have tried all of the backlight settings options and none work...and I tried restarting it again and that doesn't work either. Also I thought maybe when I connected it to my Mac Mini it would go back to normal - no joy.
Is there something I've missed? Please help!

This functionality has apparently been disabled in the latest iPod software update. Whether this was intentional or not isn't entirely clear, but other people have said the same thing. At the moment, the only thing you can do is to downgrade to the previous software (which requires erasing your iPod and copying your songs again.

By the way, your signature is much too large. They need to be around the size of the picture in my sig. The exact guidelines can be found somewhere around the forums.

I noticed that too... but, it doesn't bother me because the backlight stays on when watching videos and as far as listening to music, you don't need it on unless you're browsing (in which it will turn on Automatically).
