I bought the iPod Red Product 4GB last week & Apple have just released an 8GB version which would have been my preference. I believe Apple has a 2 week return policy so my question is can I return the 4GB & pay the extra for an upgrade to the 8GB?

The Apple Store has that 14 day return policy. From where did you purchase your iPod?

I purchased it from the Apple Store in the Florida Mall US while on Holiday, I am back at home now in the UK? any suggestions?

That's kind of tricky, considering that you aren't even in the country anymore, but your best bet is to just call Apple and see what they say (either Apple UK or the nearest Apple store if there are any close by).
