On one of my old iPod's I was able to change the battery display meter from the standard bar display
to a numeric display. I think it was with my 4G iPod.
Does anyone know of a way to the do the same with either the 60G 5th generation ipod video or the new iPod nano?

I know iPod Linux can do that, but its not compatible with 5Gens

Indeed you can. If you're comfortable doing a little firmware hacking, you might try a Google search for "iPod battery display hack".
