I'm just wondering what are the supported video iPod formats (without hacking - if that's even possible)?

Hacking isn't possible (at least at the moment). You can check the FAQ for some info on video formats (it's at the top of this forum's thread listing).

The iPod specs page says:
Video formats supported: H.264 video, up to 1.5 Mbps, 640 by 480 pixels, 30 frames per sec., Low-Complexity version of the H.264 Baseline Profile with AAC-LC audio up to 160 Kbps, 48 kHz, stereo audio in .m4v, .mp4, and .mov file formats; H.264 video, up to 768 Kbps, 320 by 240 pixels, 30 frames per sec., Baseline Profile up to Level 1.3 with AAC-LC audio up to 160 Kbps, 48 kHz, stereo audio in .m4v, .mp4, and .mov file formats; MPEG-4 video, up to 2.5 Mbps, 640 by 480 pixels, 30 frames per sec., Simple Profile with AAC-LC audio up to 160 Kbps, 48 kHz, stereo audio in .m4v, .mp4, and .mov file formats

iPod support mp4 and h.264. Many software can convert videos to iPod. Videora is FREE.

And Windows-only.
iTunes is free, also, and will convert to iPod video also.

iTunes doesn't convert video, but Quicktime does.

Well, technically it is still Quicktime doing the conversion. But in any case, there are many video formats (like WMV as far as I can tell) that can not be added to your iTunes library, so you can't use that option, even though Quicktime Pro can do the conversion.
