i noticed that I can create notes and sync them, but does anyone know where and to what this syncs?
currently i use Soho notes and am trying to sync, does anyone know how and if this is possible with this program or any other?
or even where iphone is syncing those notes or to do lists?

Notes don't sync, and the iPhone doesn't support to-dos at all at the moment.

You can email them to yourself if you want. I'd be surprised if they didn't beef up Notes in a later software update, but as of now it's very barebones.

I'm thinking that the sparse Notes and completely lacking ToDos has to do with the way Leopard will handle these items. We know that Leopard will be using a system-wide database for them, so I'm guessing they are just holding off until then. They probably have it all worked out for Outlook on the PC, but didn't want to include a feature for the PC that wasn't on the Mac

TadaList.com works really nicely on the iPhone and since it's webbased, no syncing is necessary when you login at home.

I tried tadalist, but it seemed incredibly (overly) simple. As in, it didn't look much more useful than just making a list in the notes app.

The web interface for Omnifocus sounds promising.
