My main computer is a Macbook Pro and I sync to it all of the time.
My work machine is a Dell.
When I sync to it, it changes all of the appointment times in my iPhone.
I am not sure why it does this because both of my machines have the same time zone.
Needless to say I am really late or really early for everything. Any thoughts?

It's GMT versus local time, most likely. Macs, like all *nix operating systems, maintain time based on the hardware clock being set to GMT (or UTC if you want to be precise), while WIndows systems expect the hardware clock to be set to local time.
Is the time difference consistently the same as the difference between your time zone and London time?

sorry, i am across the pond in the US.
both machines have the same time in the "tray" but when synced something funky happens and it screws up the time on my events and such...

Try turning off Time Zone support in the iPhone prefs.

Well, I don't know if it will fix your problem or not, but I had a similar issue with my iPhone where events would be way off, and I think it was because I had imported iCal data that was many years old, dating back to when I was in Japan. Turning off Time Zone support (which generally isn't necessary) fixed it.
