Experience with iPhone as Wifi/non-phone?

Does anyone know of a blog or something where someone has chronicled their experience using the iPhone as a Wifi only device?
I would like to get one, but had a few questions like:
Can you update the software?
Will it automatically connect to any unencrypted network to download my mail?
How much storage does it really have for video/music?
Does everything work as it should if your at a hotspot?
Any major problems I'm not thinking of?
Stuff like that-- I just don't want to regret dropping a few hundred bucks on a fancy iPod...

I use the iPhone normally, but I think I can answer some of your questions.
I think you can update it just fine, at least in theory. It's basically just a question of getting it activated, but I believe if you restore the phone you need to go through the activation process again. And of course, Apple could theoretically change things so that the updater checks for active service or something, but I don't think they would.
I'm not positive about this, but I don't think the iPhone will ever use wifi when it is in sleep mode, which would mean that you would never get mail unless you were using the phone at the time.
I can't recall the exact capacity, but an 8GB iPhone has something like 7.2GB available.
I've heard that people who have tricked the iPhone into activating without going through AT&T can't use the Youtube player, but I'm not sure of the details. Anyone know?

Our shop demo is activated through AT&T, but has no international service, so it's effectively everything-but-SMS-and-cellphone.
Works fine, can be updated, YouTube is excellent.

The folks who've hacked their iPhone on to non-AT&T GSM networks (T-Mobile for example) report the YouTube app doesn't work.

You need to activate the YouTube application manually if you're not using the AT&T network.
The instructions below are for Windows but I think you can perform the same hack on the mac using the various hacking tools. (Installer.app, Jail Break/Terminal, etc.)

YouTube *will* work fine if you're on an AT&T plan, but use the thing overseas, with international roaming switched off (as in our case).
