Well, while buying my new iMac last month, of course I got an ipod, too -- with the rebate, I got (or will get) a $250 iPod for $50. I was intending to give it to my daughter, who's using a 2nd gen one inherited from her dad.
Of course, I'm sure that she'll want one of the new ones instead. I kind of figured that would happen. And then I figured I can always sell the new one. It's not even been opened, but it is, of course, missing the UPC code I needed to send in for the rebate. Even if I can't get full price for it, I bet I can get quite a bit. (And I'm walking around with a first gen mini; I can always keep it for me!)

Don't open it. Nobody will care about the missing package UPC. Apple will still cover it via the serial number. You can probably get about $175 for it. Usually the best place to sell stuff like that is eBay, usually brings the most money. Unfortunately, the new iPod announcement has been on CNN so nobody is going to want old news iPods. But try to find someone with an iPhone who wants a "two-week vacation" iPod with more storage but will have zero use for a new touch-screen iPod. They'd probably go about $200 for an unopened one.

Put it up on Craiglist ASAP.
Don't bother with eBay - you might get a higher price, but paypal fees/ebay fees/shipping fees will erode your final profit.
Your iPod is considered opened - in order to get the UPC code, you had to cut the UPC label from the cardboard itself. Make sure you sell it as an open packaged product, not 'brand new'.

I did this a few years ago on ebay, and got a quick return for the money.
I actually just bought another macbook and got the same deal, and just posted it on craigslist (my first time using craigslist rather than ebay). I figured I'd need to put it on soon because I've been procrastinating, and the new iPods come out tomorrow...
With the iPod promo, and the printer promo, a new mac is really a few hundred dollars cheaper if you sell the iPod/printer afterwards. Pretty good deal.

I actually thought about trading it in, after the new ones come out, and using the new one for the rebate -- until I realized that of course the new ones aren't included in the promo! I also need a new iPod, so it wasn't a bad idea at all to get one. But I'm relatively sure my daughter will want a new one. So -- it's off to sell this one!

I did the same thing - ordered a 30GB last night for $50 as part of the educational discount (picked up a new iMac). Even though the new ones will include night-vision goggles and slice through tin cans, a last-gen iPod is clearly worth more than $50. Unless you need a portable video solution it's not that big a difference - they will both play music just as effectively.
Now, if I had just paid $250 for the same model I'd be pretty pissed...
