I'm debating between the iPod classic and the iTouch.
One question I have is will the Apple iPod Camera Connector work on it, or will I need to the iPod classic.
I understand that memory difference is astounding and the classic is better suited but I'm wondering if the functionality is there on the iTouch?
I'm trying figure out which one will meet my needs to the best and knowing if the itouch supports pictures, as I'd like to copy pictures from my camera to the ipod.

I don't think either supports it. The website clearly says:
Compatible with iPod with color display (software v1.1 or later) and iPod with video only.
While other iPod accessories (like the radio remote) have been updated to show compatibility with the new iPods.
It may have to do with a change of chipsets; IIRC the camera connector did some bizzare thing using the half-functional Firewire pins in the iPod dock connector.

Neither of those iPods support the camera connector.

I didn't know they even still sold the camera connector.
If the camera connector info list was never updated, it won't list any iPods released after it was released.
So unless someone has tried it, I wouldn't say it won't work.

From iLounge's iPod touch review:
Any device that treated an iPod like a mass storage device, such as the iPod Camera Connector, won’t work on iPod touch. That includes voice recorders that work on the fifth-generation iPod and iPod classic, second- and third-generation iPod nanos; they do not work on iPod touch. And somewhat inexplicably, the iPod Radio Remote does not work with the iPod touch, either. It comes up as an unsupported accessory, just as it does with the iPhone.
Emphasis mine. I hope that settles it.
