Being on the road a lot the last few weeks I have been passing my iTouch around for others to take home for a few days to play. From my utterly absolutely unscientific pool of 4 staff - all have decided to go the classic route.

I think the lack of physical controls for at least volume and play/pause is a game killer for many. That, and the touch interface paradigm shift may be too much to get used to for some people.
I'm more surprised you managed to part with your touch for such a long period of time! You must really trust your test group

So explain why they seem to sell out as soon as any stock arrives in my country ?! I'm hoping to pick one up tomorrow - literally, pick one up and play with it. I've not even seen the iPhone/iPod touch interface in the flesh yet

There's a good reason why Apple didn't totally kill the "Classic" iPod line. Partly because of the lack of massive disc space that the Touch has, but also because not everyone is interested in changing the way they've been using their iPod for the last 5 years or so.
But there was definitely a large market for the Touch. People were begging for a non-phone iPhone, and Apple delivered (lets not get into the feature war between the iPhone and the Touch).
But Apple now has a very healthy line of iPods. Seemingly perfect for anyone's needs. There's room to grow of course. I think the Touch is the future, but it might take some time to shift everyone over.

I suspect you answered your own question.
People like myself buy it sight/touch unseen. But *all* I am saying is this - 4 people played with it for 2-3 days and all decided not to go that route.
Do I like mine - sure it's neat - esp. YouTube. Will it replace my 80G iPod - nope - that will remain my "music" machine...

I agree it would be nice if it had a couple buttons for play/pause/volume up/down. But I adore my Touch. I think my desire for the above would be alleviated with ONE change. Right now I have to hit the home button 3 times for the iPod controls. One to bring it out of sleep and then twice for the iPod controls. I would prefer it if I'd only have to do it twice.
