I have a G4 iMac running 10.4.10 and an iPhone purchased 10/25/07 running v1.1.1. Sync'ed the iPhone several times during the first week or so (note that in iTunes, I had turned off auto-sync). Around the time that I installed iTunes 7.5 (with the QuickTime upodate), iTunes stopped recognizing the iPhone. The iMac sees the iPhone...when I open System Profiler, it shows up in the USB list. When I connect the iPhone, iTunes goes into spinning beach ball mode. Sometimes, it's a never-ending beach ball and I have to force-quit iTunes. Other times, I get an error message along the lines of iTunes encountered an error with a peecee like error code of 0xE0000nn (where nn is sometimes 01, 04, or 24). The iPhone itself knows it's connected because it starts charging.
I've been going through the Apple support boards and here's what I've tried so far:
- deleted iTunes, iTunes pkg's, and AppleMobileSync pkg; downloaded and re-installed iTunes
- changed USB ports
- connected the cable directly to the iPhone rather than the dock
- disabled auto-sync with Image Capture
- reset all settings on the iPhone (Seetings > General > Reset > Reset All Settings)
- restarted the iMac
- connected the iPhone after launching iTunes
- connected the iPhone while logged into the Admin account (it's my iMac, my daily account is a non-admin account)
- created a new user and connected the iPhone
- bought and connected iPhone through a powered USB hub.
The iPhone can connect with other computers and appears in iTunes: - my work PC (WinXP SP2) with iTunes 7.5. In fact, I sync my contacts and calendar from there.
- a 20" Alumnium iMac at MicroCenter running 10.4.10 and iTunes 7.4
- another iMac at MicroCenter running 10.5 and iTunes 7.5 (and no, I didn't actually sync from those MC Macs)
So what should I do that hasn't been tried yet?

Tried restarting your iPhone?
This happened to me once on my PC. I fixed it by restarting my iPhone and connecting directly to the USB port on my computer (had been using a hub, which apparently created the problem).

Yep. It's been restarted many times.

Annoying as it may be, you probably need to call Apple's support line.

I face the same issue intermittently. Perhaps it's an issue with G4 systems - both my PowerBook and Tower are G4 systems. I suspect it's something to do with the general USB implementation.
I am SO tired of USB issues with my G4 tower.
1) Can't install a USB upgrade card because it doesn't let the computer sleep.
2) Can't upgrade software with a USB device attached because weird stuff happens when you do.
3) Can't use a bluetooth USB adaptor because it interferes with just about everything else.
So I'm stuck with a slow USB connection and no bluetooth mouse or keyboard. Apple is far from perfect. Still better than the alternatives. Disappointing, though. These basic details take the fun out of my Mac experience.

Well, I fixed it on my own.
I was checking out how the YSB connections looked in System Profiler. I noticed that no matter which of the three USB ports on my iMac that I connected the iPhone to, or even if I connected through a USB hub, the iPhone looked like it was connected via the hub within the Keyboard. I moved the Keyboard to the USB hub, docked the iPhone, and re-launched iTunes. The iPhone then appeared in iTunes.
Note: If iTunes is already open when I dock the iPhone, it won't show up in iTunes. iTunes only sees the iPhone if it is connected before opening iTunes.
