I imported some rather large images onto the iphone and when I barely zoom in on the phone the res gets to grainy, even if the image was huge to start with.
Can I bypass this somehow ?

Are you being patient? When I double-tap a large image, it's grainy for a few seconds, then the focus snaps to what you'd expect it to be... Sharp. If you're talking very large pictures, perhaps this would take even longer?

When you copy pictures to the iphone they aren't copied over in full resolution. I always notice iphoto/itunes "optimizing" the pictures for the phone.
It makes sense given the limited screen size and to help them all scroll faster and all behave consistently.

Not to the best of my knowledge. What types of images are these that you need to zoom in so much for them to be usable? are you trying to read text in the image for example?
If you hack the phone you can add a finder like navigation system and copy the full resolution images that way but it will be a pain to use and probably pretty slow.

For the iPod there is an option to include full resolution versions (in iTunes), check if this is available for the iPhone.

On the iPod, that option copies all the full-res images to a folder on the iPod, but does NOT affect what can be accessed via the iPod interface, at all.
