Are you required to provide some sort of proof you are attending or have been accepted to a college or do they work on the 'honor system'?

Honor system. But don't abuse the privilege and screw it up for the rest of us, OK? I bought my iMac at the student price at a local Apple Store, fully prepared to show my student ID. I wasn't asked for it. So you should be able to get the whole deal without having to prove you're attending your school to anyone in particular.
