For some reason, every time I try converting a regular .mpg to a .m4v file so I can watch it on my iPod touch, the audio is completely lost. I was able to do this before without any problems, but now I'm getting files with no audio every time I try converting. Any ideas why this is or how to fix it?

What is "regular .mpg"? mpg is just a container that can contain a variety of audio and video streams.

Sounds exactly what it could be like.

I just use iTunes to convert. I've also tried manually exporting them to .m4v with Quicktime with the same result. I just dont understand it because I was able to convert them just fine a couple weeks ago. It suddenly just started doing this. I've updated my iTunes, jailbroke my iPod touch, and installed the updated firmware from Apple since then, but I don't see how any of those could cause this to happen.

This happened to me too. I have a lot of commercials in mpg format and none would retain their audio converting in iTunes. :/

Coincidently, I was able to convert them just fine using VLC. It's somewhat of a time consuming process if you want to convert more than one or two videos though.

Have you tried iSquint? It does batch conversion. And it's free.

I can't recall how I did it, but I suspect it was ffmpegx, since none of the apps that came up in a google search seemed familiar.

I'll try iSquint. If that doesn't work I'll prolly just set up a new task in Automator. I just started using that program...veeerryyy good for this sort of tedious, repetitive task.

I have the same problem with my ipod touch. No sound on videos. I have Quicktime pro and Miro and still no results on it. After ripping in either format it will not play sounds on ITunes. I use to be able to play videos in Quicktime and they will no longer play sound, only video on my MacBookPro and Ipod Touch. I'll try the Isquint.

That's exactly it.
Most/all mpeg (Layer 1) videos need demuxing first. In the old PPC days, you used bbDEMUX and then put the audio/video files back together in Quicktime Pro.
iSquint is also handy if you have .avi .flv or .wmv files (and with all these flash videos around the world, converting them to iTunes format comes easy with iSquint while it's free, you don't need the Hub).
