1) I use IMAP via Gmail. My sent folder is not present. Is there something I missed when setting it up?
2) Does push have to be in conjunction with mobile.me?

1) On my phone, the Gmail sent folder only stores the mail sent from the phone itself. So if you haven't sent anything, that might be the reason there is no sent folder. AFAIK, there's no way to sync those 2 folders.
2) Push will also work with an exchange account, but there's currently no other email type that can push to the iPhone.

Did you input the [Gmail] root folder?
Also, under settings, you will probably have to go into the Advanced tab for that account and set the Sent folder to Gmail's Sent Mail. Doing these two lets sent mail go into the Gmail Sent Mail server folder and for me to see previous sent mail, such as those sent from my computer.
I have an iPod Touch running the latest updates, so the functionality should be the same.

On the Gmail Imap, Cold Warrior has it right. The key is going to the advanced settings for the Gmail account on your iPhone and setting the IMAP Path Prefix to [Gmail]. If you do that you'll get two-way sync for sent mail and the folder should be visible on your iPhone.
There are a few other push email types, aside from Mobileme and Exchange that will work, Yahoo being the more prominent. I set up a Yahoo account just to try out the push and it works pretty good, though it is definitely slower then my exchange account (takes about 5-10 seconds as opposed to 1-2 seconds). Yahoo doesn't offer IMAP, though, so I've stayed with Gmail for my personal email as IMAP is far more valuable to me then push.

Hmm, under Advanced, I do not see anything relating to a Sent folder.

Ah... what I forgot about until you mentioned that is that you need to set up your email account as a regular IMAP account, not the default Gmail type. Unfortunately you can only do that during the initial setup so, if you're up for it, create a new IMAP account and enter your Gmail info. That should solve the issue.

Thanks. It works correctly now.
I have two IMAP accounts set up. Is it possible to have two separate signatures for them?

No, and it's actually my biggest pet peeve about mobilemail.
