Should I wait for this to come out or is this a few years down the road?
I've been reading different opinions. One says the ipod memory is different than iphone memory and iphone has no foreseeable future to go up to 30G because it has different hardware installed that can't go up to 30G anytime soon.

It's hard to say. Apple may silently upgrade the capacity during MacWorld like they did with the first gen iPhone.
