Just in case anybody was wondering how well iTunes scales, these guys had one Mac mini stream over wifi to 5 AppleTVs and 5 AP Expresses at the same time.

The playback didn't stutter and the units remained responsive. They even used the iPhone Remote app to control thie entire setup.

The network load was no more than ~2.5MB/s so there's still more than enough room for expansion.

With the video quality turned down so low (5Mbps for HD? ), shouldn't they be able to do about 20 video streams?

Their 5 concurrent HD podcasts came in at ~4MBps. So they could either run about 15 of those or increase the bit rate by a factor three.
