Is there any way to create an AppleScript that would automate the process of backing up specific folders on my (jailbroken) iPhone to dated backup folders in a location of my choosing on my Mac?

I would like to have an AppleScript automatically backup the following folders on my iPhone:

Stash>Themes.xxxxx
mobile>Library>SBSettings
mobile>Library>Preferences>TimeCapsule
mobile>Library>AppBackup
mobile>Library>Downloads
...and perhaps a few others...

What would really be amazing would be to setup an iCal alarm to trigger every night while I am sleeping (when my iPhone is always charging in the cradle) that would launch transmit and then initiate a backup...

I don't suppose anyone wants to get crazy and make such a script...not just for me, but for the hundreds of others that would certain use it as well??
