I just got the new iphone and now I'm seeing the following problem:
Add music to playlist, songs upload, iphone/tunes goes into synch mode and then hangs until the beach ball shows up. Force quit is the only option then.
I've tried variations of
deauth/auth computer
delete app from appstore/reinstall app

Still keeps crashing. What's the resolution before I go to the store.
If I do a restore, do I lose all the music uploaded so far?

You'll lose the music unless you have backed up your iPhone. Tried an iTunes re-install?
