Clearing out an unlocked iPhone

I have a first generation iPhone that I am going to sell on eBay (yep, people still buy these), but I am not sure of the best way to clear everything off of it. Can I just delete all of the apps, and call it good? or do I need to restore it, and then unlock it again? I haven't ever unlocked one of these things, so I am a little nervous to do it and risk breaking the phone.
What would be the drawbacks to just deleting out the apps and the network settings?

In theory you could have leftover data from emails, SMS or call histories.
Apple offers a secure erase option from within the interface. I would do that and then set up the phone as a new iPhone using iTunes.
I assume that won't hurt the unlock (assuming it was factory unlocked).

Some iPhones sold in some countries were sold unlocked. Lacking a better phrase, I used the term 'factory'.
If you have after-market unlocked it, then you would need to re-unlock.

I found an app on Cydia called "Empty Contacts" that allowed me to clear out all of the contacts, but I couldn't find anything to clear out the calendar very easily.
I ended up restoring it to 3.1.2 and using blackra!n to unlock and jailbreak it. I tried RedSn0w and UltraSn0w, but neither of them worked for me. After about 3 hours of trying to get it to be unlocked, I tried blackra!n, and it only took about 2 minutes and everything worked super. Maybe only 1 minute.
So, if you ever need to unlock and jailbreak an iPhone to 3.1.2, blackra!n is the way to do it.

I don't know if the first gen has this problem, but the 3GS will not boot up after being unlocked without a connection to blackrain on a computer.

First generation iPhones are easily unlocked with the QuickPwn and Pwnage tools. I've used them both and they are easy as pie to use.
As for erasing, you need to do a full restore first, then Pwn it. I had read a long time ago that even restored iPhones had old data on them the same way a non-zeroed HDD does, but only the really motivated know how to recover that data.
If you are really paranoid, do some Googling or Binging on how to completely clear a first-gen iPhone.
