Now I have an iPhone 4, my mum is now the owner of my 3G. She doesn't have an iTunes store account, and doesn't really want one connected to her bank account. Can an itunes account be made with no card details, and apps/songs etc for the iphone bought only by redeeming gift cards?

Look after my manor, or I will bum you, literally, to death.

You'll need a gift card at the initial account creation, but a credit card isn't required to have an account. She will have to provide her billing address to determine which store she gets access to.
