i am disabled and only have the use of one hand.
my wife can help me if necessary if needed, but not too often!
my question is
could i use an iPhone one handed?
i would really like to have one, bt only if i can operate it on my own

One handed is no problem. The pinch to zoon gesture is maybe a little bit awkward when holding the phone in the same hand, but it's possible. You will not need the help of your wife.
It's possible to operate with one finger (or stylus) even, according to Apple:

You can definitely use the iPhone one-handed. It's quite usable being held in one hand and using the thumb on that hand.

Assuming an average size hand you shouldn't have any problem. I use my phone one-handed unless I'm typing a longer message and then I use two thumbs. Even with one hand though I can type reasonably quickly and only need to shift the phone in my hand slightly to reach the furthest buttons that are in the upper right and left corners.

Pinch zooming is extremely hard to do one-handed. However, tap-to-zoom works of course.

Some things are not done as well with one hand (stability for taking photos, for instance) but the phone is totally usable. And as Siri usability evolves (and it will) the iPhone will be the go-to choice for folks with all kinds of disabilities.

Your point about the camera is a good one. Not just the stability but the tap to focus and tap to auto expose is difficult with one hand.

Maybe adapt a gorillapod to be a wrist/holder? then tap with other hand?

It is fairly easy to use the iPhone for most basic functions with one hand, though like most "now do it with only one hand" adaptations, it will take practice. For things like zooming, it would help to have a surface to put the phone on, though your lap should work for that.
