For those of you that care, the new RedSnow works just fine, at least for me... I was able to easily install the untethered jailbreak and reinstall MyWi.

I've been running it fine for about a week. Nice to have an untethered jailbreak again. Note that this is for non-A5 devices although the A5 compatible jailbreak is supposed to be released in about a week.
Sadly, iBooks is busted again. They had just fixed it with the tethered jailbreak. Hopefully they'll get an update out soon to get it working.
I'm officially sick of dealing with the whole jailbreak/unlock thing. I'm going to bite the bullet and buy an unlocked iPhone 5 when it's released this year.
Besson, why do you jailbreak? Is it solely for MyWi? I do so only so I can unlock the baseband and use my phone in the DR. Over the years I've installed apps from Cydia only to end up deleting them. I used SBRotator and ScrollingBoard but never bothered reinstalling them after upgrading to iOS 5 and I don't miss them. I've tried Multifl0w but found it sluggish.

JBing isn't a problem as long as you're not obsessive about updating to the latest stock firmware constantly. I haven't updated my 3GS since I got inadvertently upgraded to 4.3.1 (sadly getting stuck on an un-unlockable baseband). I may not have the latest features, but I have nothing to worry about-my JB utilities work just fine. I keep seeing people say the same thing as what Atheist says above me about getting tired of JBing, and I just don't get what they're doing with their iPhones. Here's a hint: If you're constantly worried about the next JB release, you're doing it wrong! Stop upgrading to every new stock firmware!

It's not just about having the latest and greatest. For me upgrading to iOS 5 on my iPhone 4 was a no-brainer. Too many usable features to ignore. I upgraded to 5.0.1 when I went to the untethered jailbreak since it just made sense. (If I'm already fussing with the jailbreak I might as well upgrade the OS). And as you've experienced yourself, there is always the possibility of inadvertently upgrading the baseband and rendering the phone non-unlockable. I'd rather not have to worry about that. Would much rather have a stock phone the just works out of the box in any country I happen to be in. (I'm frequently in 3 different countries so it's important to me.)

So then the question is, how did you upgrade to 5.0.1 without upgrading using the stock firmware (and therefore getting the latest baseband)? Were you tethered Jailbroken until now?
I understand what you're saying. If your main use for jailbreaking is just to keep yourself unlocked with ultrasn0w, but that also conflicts with your desire to be at the latest firmware, then it would be better just to have an unlocked phone. What are the unlocking policies like in Pueblo Bavaro? The same draconian discrimination policy that AT&T has, or did you buy from AT&T originally? It greatly disturbs me that AT&T will unlock every other subsidized smartphone according to a standard unlock policy because they were forced to by class action lawsuit, but they got to weasel out of applying that to the iPhone with a completely bogus excuse. I don't see why I should have to pay full price to get what everyone else with all other smartphones get with their subsidized phone (long before their contract is out).
That matter aside, for me personally, I use a number of JB utilities that make JBing very worth the drawbacks. My iPhone is much more functional for me with my JB setup. But for many that's not the case.

I used redsn0w to create a custom IPSW that doesn't update the baseband. And yes.. with iOS 5.0 it was a tethered jailbreak. Not sure if it was just me or if this was a known issue with the tethered jailbreak/iOS 5/ultrasn0w but I was unable to switch out my SIM card without rebooting the phone. Hence it was a bitch cuz I had to have my computer handy to reapply the jailbreak when switching SIM cards (which I usually do when I'm on a plane).

The 2 carriers in the DR with the iPhone (Claro & Orange) have similar plans when it comes to the iPhone. Only the privileged few can afford one so they charge through the nose. I'm not even sure what they do after you fulfill your 2 year contract. Doesn't matter right now anyway because I don't have my cedula (residency) here in the DR so I can't even get a post-paid phone plan. Pre-pay only (and no data) for me. What pisses me off is that they offer a reasonably priced pre-pay option for data but it's only for Blackberry's (which are HUGE here in the DR). iPhone pre-pay data is insanely priced. Seeing that the average person makes maybe $200 per month they figure anyone that has an iPhone is rich.
I got my iPhone in the States. A friend added me to his family plan so I'm only paying $25/month. I figure it's worth it since I'm up there every 6 weeks or so.

If I lived full time in the States, I would probably jailbreak so I could do tethering.

I JB so I can unlock and use my 3Gs on T-mobile.
5.0.1 was somewhat of a challenge, not sure why. Tried several times on my iMac (used Pwnage which also keeps your firmware intact) and keep getting errors while trying to load the cooked ipsw. Started the whole thing over on my laptop and it took on the first try. I did have to have an AT&T sim to activate the phone though. Good thing I had one.
Battery life is noticeably less but that's to be expected given the extra features (location based weather, iCloud, etc.). Still get a full day out of it unless I'm playing Angry Birds alot.

Yeah, it's solely for MyWi. If you know a better way to do tethering without paying AT&T additional money, please let me know. I refuse to pay AT&T for the privilege of deciding how I will use the data I've already paid for.
MyWi + my iPhone + car trips when I'm not driving and want to work is pretty sweet.
It's pretty hard to program on my MBP and drive at the same time though...

That's the iPod Soft Ware file. It's the firmware file that has the OS and baseband. PwnageTool and redsn0w can create a custom IPSW file with the baseband update removed. That's what allows us unlockers to upgrade the OS without upgrading the baseband. We have to do that because the last unlockable baseband is version 01.59.00 which came out well over a year ago. Thus making unlockable iPhone 4's a hot commodity. The iPhone 4S cannot be unlocked. As Big Mac found out, if you accidentally let iTunes update your iPhone firmware with the stock IPSW file, you're screwed.

As far as I can tell, they don't offer data plans specifically for the iPad. I suspect you could take a SIM card that had a data plan and stick it in the iPad and it would work.

Ahhh, but this is only relevant if we are concerned with unlocking the phone, and not just jailbreaking it like I've been doing?

Correct. Only unlockers need to worry about baseband updates.

Only unlockers want to retain an old baseband, be it the original iP4 BB from 2010 (Software unlock), or the BB from the last IOS 4.x.x (hardware unlock).
But you never know when you are going to a geographic location outside your locking carrier, so it is a good idea to remain at older basebands.
Baseband updates are irreversible, unlike iOS updates (if you have the SHSH).
