I have a Bootcamp partition for Windows XP (NTFS) that is sitting on my desktop in OSX named "Untitled". Is there anyway I can rename this to something like "Windows"?

Yep, just do it while booted into Windows.

I too, am Quite annoyed by this.
How does one go about doing that under Windows? (Vista, preferably)

It corresponds to the C: drive, so just open up My Computer and rename it there.

These instructions are XP-specific, and of course you do this while booted into Windows, but Vista should be very similar.
Open Explorer (you can do this by double clicking on "My Computer"). Right click on the folder/drive you want to change the name of. Click on "Properties" (it's the last one listed). There's a box at the top next to the drive icon. It has whatever the default name of the drive is, and that data is highlighted. Start typing. Press "Enter." Celebrate.
