According to MacWorld, you can only continue to use existing Windows partitions. The utility will cease to function.
However, like most other time-limited things, rolling back the clock will likely allow you to use the utility.

What is the reasoning behind Bootcamp ending? This is the first time I've heard of this.

It's only ending on Tiger. It was released as a beta preview of a Leopard feature. Now that Leopard is out, the Tiger preview is over. Apple already announced this in September.
You can still continue to use existing Windows partitions. You just won't be able to use the utility anymore.

They actually announced this back when BootCamp first came out. Nobody should be surprised - its been common knowledge since BootCamp came out since it was even written on the BC web page.

+1
Apple has been very upfront about it being a trail beta for a feature that would be permanent come Leopard.
Actually, I'm glad I get to keep accessing my partition, I was half expecting to be locked out; but thinking about that, I don't think that's possible.
I figure I'm fine until they get all my professional software up to speed with Leopard. I was planning on switching over this summer.

I'm trying to remove my boot camp partition so I can install Parrallels but my Boot Camp version is already expired. Any thoughts on how to do this?

Try setting your clock to the beginning of this month, or even next month, then see what happens.

Why do you need to remove the Boot Camp partition to install Parallels? It's doable, but unless you're running short of disk space I don't see why you want to.

Yeah, why don't you just use your BC partition as the Parallels VM?
