I want to upgrade my iphone but I'm worried when I download the upgrade I'll lose my apps (like some others have done). How do I back up my apps to my mac?

You can't lose your apps.

You can always re-download them for free,

Also, all your apps are saved in ~/Music/iTunes/iTunes Music/Mobile Applications/

But it is a good idea to right click your iPhone in the iTunes source list (left side pane) and select Backup Now.

Just a word of warning... most of your common apps & third-party apps (notes, carpenter, media) etc
should be fine even some games such has Lara Croft TombRaider, IceAge... even from a clean install.

Now I did do a backup myself moving from iPhone 4 to iPhone 4s using a clean install first then did the backup. Reason for 1 app "GT+Free" this lost it's data, I sent them GameLoft an email to which they replied "All data is kept on the phone itself!"

So you just have to hope for the best but you should be fine.
