My searches do not reveal any software that allows you to [at least] password protect information on your ipod
Any ideas?

You are probably looking for iPod specific software. But the iPod is just another hard disk so you should use techniques which are general to any hard drive.

Use Disk Copy to create an encrypted disk image on the iPod and store your sensitive information on the disk image.

OK to clarify a bit
An encrypted disk would work if I wanted to carry the odd excel file etc
however

[like a PDA]
all my contacts and calendars are on via isync
anyone can pick it up and browse them [worse yet if it is lost or stolen]

There does not seem to be any way to secure them
