Yes, you can choose which songs go on to the iPOD, all will become clear when you see the iPod icon in Itunes come up.
You can copy files on to the iPod without worrying about the contacts etc. If I recall (I don't use these features of the iPod, buy a T68), contacts are stored in a separate folder called, funnily enough, Contacts.
So, you can just copy stuff on like a normal hard drive.
