If I were to buy an iPod in Japan would I be able to change the language on it to English? I know the CD's would be Japanese, but I could download all I need. Is this the case?

I guess so. My iPod, bought in Holland can run in every single language that is supported by the iPod's from everywhere.

All ipods sold everywhere are the same -- they just need to be set to a particular language. No need to download anything -- just go to the preferences and choose English.
