if you daisy chain many firewire drives, should you put them all on cable select?

Whatever setting the FireWire case manufacturer tells you to use.

I just looked at the instructions but it doesn't state anything.

Shouldn't most enclosures be the same [if they use the Oxford 911 chipset] >??

In most cases, it doesn't matter. Master, slave, cable select, or missing entirely isn't very important when you only have one drive per channel.
