You could use AppleScript to do it. Open iTunes' dictionary by selecting iTunes in the Script Editior's "Open Dictionary" item in the file menu for more info.

You can browse here too.

How would iTunes know whether you feel the song should be a ** or a *****? ...or am I missing something. Perhaps you mean, you want iTunes to apply the same rating to each song you play? If that's the case, wouldn't you be able to create an Applescript to do the job?

A script could be written that looks at the play count of the selected tracks; if any track's play count is greater than x then it would increase that track's rating by one star (or change it to whatever). Visit the site or email me and I can work on this with you.

Okay, try this. Create a smart playlist with lets say the last 300 songs played. Select all of the songs (cmd-a) Then go to the rating column and ctrl-click on just one of the songs rating, on the pop-up menu choose My-Rating. Select the desired rating, all the songs selected will change.
