Ignoring the 11mbps vs 54mbps difference, are there any advantages of paying £150 for an Extreme base station as opposed to £50 for a regular one? This is for an iBook.

Like security, features etc.

The big advantages of the AEBS are the USB printer port and wireless bridging. The latter allows you to extend your range across two AEBSes without running an ethernet cable between them. Very cool, but only if you actually need/use it.
If you can live w/o those two features, then I'd look around for a 3rd party wireless router. Most will have additional e'net ports and more features than the ABS/AEBSes. They're also perfectly simple to set up.
Buy.com has the Netgear MR814 for 40 bucks. This is a great router for an exceptional price. I own an Asante FR1004AL that is awesome. It even handles AppleTalk seamlessly, which, besides the ABSes, is one of a very few that do.

It's just a 802.11b Wireless Access Point from Linksys which I can just connect to my router. What do you guys think?

I bought the ABE recently, even though I currently only have a TiBook 400 with 802.11b. The print server sealed the deal for me, as my printer is upstairs, while I spend most of my time downstairs. I don't have to connect my Powerbook everytime I want to print now.

I have a Printer connected to one of the PC's connected to the router, will I be able to access that via printer sharing? (In Jaguar or Panther)

I'm not crazy about Linksys products, particularly wireless ones for Macs. Also, considering the prices of new wireless routers these days, I'd much rather buy one of these and have one box doing both my routering and wireless work.
There's another thread in this forum discussing sharing a printer through a PC. It's possible, but it wouldn't be through Jag's printer sharing, as that requires the printer to be connected to the Mac. Certain Windows versions have a similar feature, though. In fact, theirs has been around longer and may even be somewhat better.

I think I've narrowed it down to 2 products:

BEFW11S4-UK | Wireless Access Point Router with 4-Port Switch - £58

WAP11 | Wireless Access Point - £77

From what I can tell, the BEFW11S4-UK is my router and the WAP11 in one isn't it?

Would I be better of just replacing my current router outright with the BEFW11S4-UK? And would Airport on an iBook work fine with it?

I ended up getting the 12" Powebook with Superdrive from the Apple refurb store for £1087, saved £363 and as a consequence have bought the Airport Extreme base station and matching card
