Nokia used to be the easiest and most straightforward to use, but lagged behind with phone features and looks.
SonyEriccson is touted as a great companion for OS X if you have bluetooth, but the problem is that the OS on the SonyEricsson phones is ugly and awkward.

I don't like the Palm OS phones, and others like Siemens and Alcatel are all even uglier and less easy to use.

Do I have to wait until Apple releases their own branded phone with an OS made by Pixo??

You are confusing OS with UI.

Both the SE and Nokias use Symbian as their OS. (which is good)

However they use different UI's - the SE P800's UI is called - (wait for it) - Quartz!

It's not bad actually.

Yup. Both Nokia's 60-series Symbian OS and SE's Quartz are intuitive and powerful.
