There must be a setting somewhere to turn this off but I can't figure it out.

I AM using iCal with it, but the iPod beeps regardless if I have anything that day or not.

Because someone set it to be on, but didn't change the time. You, or someone who might've been playing with your iPod, probably accidentally set it to be ON. I can't think of any other reason.
