Are you able to use the supplied settings to read the amount of ink left in the cartridges [provided by your manufacturer, in my case, HP] .... ???

When I try to use the HP utilities to read the ink status, it says I'm unable to

I assume it's because the printer is connected to the Airport Extreme.

Is there anyway to read it without unplugging and replugging it in the computer?

To use the utility features you have to plug your printer back into your computer. I just did this today to check ink levels.
MacBook Air, Mac OS X (10.7), 1.6 GHz, Core i5, 4GB 1333 MHz DDR3, 128 GB SSD, 24" LED ACD, 1TB Time Capsule (late 2009), IOS4 ATV, 16GB iPhone 4

Yeah, I agree. It would be nice if either Apple or the printer manufacturers could find a way around that. With more households getting wireless networks, it's got to be getting more common.
