You can carry any computer files you want. I'll be running my massive install of UT2004 + add-ons from my iPod shortly.
But games FOR the iPod are fixed unless Apple adds some (which they've occasionally done).
However...
1. There are some "choose your own adventure" style multiple-choice text adventures for iPod that use Notes Reader. Not sure if any truly fun ones are out, but they exist.
2. The Linux on iPod project lets you boot your iPod into your choice of the Apple system or Linux with the "Podzilla" GUI. There are more games for that: Pong (2-paddle "tennis"), Reversi/Othello, Minesweeper, Connect-Four, Tetris, and maybe others like PacMan on the way. There even seems to be a port of the original Doom in progress--I'll believe it when I see it

Linux on iPod doesn't yet run on any clickwheel iPods (including Mini), but people are still trying to get that working I think. It would be pretty cool in color
