Basically, you don't "need" to do this. Ever.
Macs can read Windows iPods just fine, and it should be completely transparent. In fact, Windows iPods are more versatile, because you can use them on both Windows and Mac without any additional software.
Once I've backed up the songs on my iPod, I'm going to reinstall my iPod as a Winpod so I can use it at work and at home. Not willing to buy MacOpener for $50, that's just dumb when Macs can read Windows disks for free.
BUT if you don't care, and you really want an Apple HFS+ formatted iPod, and don't care that you'll have to spend $50 to use it on Windows without changing it back, all you have to do is run the Mac iPod installer (on you iPod CD unless it's an HPod, or downloadable from Apple) and click "restore".
