Possible to Change Ink Cartridge Before it's Empty?

I haven't been able to find a conclusive answer to this yet so I hope someone here can help.

I have an Epson 2100 which uses three different types of black ink. Is it possble to swap these around?

I mainly print on plain paper and therefore use the Matte Black cartridge, but ocassionally want to print on glossy photo paper - if I swap to a Photo Black cartridge and then back again, will the cartridges dry out?

It is possible to tell the printer to remove the cartridge before it's empty, but an Epson cartridge cannot be reinserted after being removed, it won't work.
