A hack was posted to enable line-in recording at up to 96kHz through the headphone port. Involves installing linux first (but once you set it up, it works through the normal iPod OS). Unfortunately, it's only for 1/2/3G iPods; 4G, Photo, and Mini aren't supported.

Installed to my 3G this morning, very nice to have the extra functionality for free. Another big thumbs up to hack a day for another great iPod trick.
