I have a dual 1ghz G4 MDD, and have two monitors hooked up. I have a new unused nVidia FX5200 card. If I add this card to my machine, will I be able to run a third monitor? Will the OS (10.2.8) reconise it?

If it's a PCI card, yes. If it's an AGP card, no. Your mac only has one AGP slot.
I have no idea if there is a PCI version of the FX5200 or not.

There are no nVidia PCI cards for the Mac. A PC graphics card won't work.

But by buying PCI graphics cards, you can add as many displays as you wish. A Radeon 9000 PCI, for example, will let you add two more displays.
