Hi does anyone know if using a bluetooth usb dongle and an apple bluetooth keyboard or mouse would work? Would it work as well as it would if the bluetooth was integrated?

Yes and yes.
My personal recommendation is the D-Link model that Apple sells on their website (supported by all of Apple's bluetooth firmware updates so far). I've got one on my G5 and one on my wife's iMac G5. They work wonderfully.

I got the Kensington and it works great - I have the Apple Keyboard running with it now!
