Anyone know of any products that will allow me to do this (pref USB to Spdif) I would prefer suggestions for small/portable low cost devices (not rack mounted units) (one input/output) but ALL suggestions are welcome (devices such as Rolands UA 30).
Cheers!

The Roland UA30 would seem to be the cheapest way of inputting sound in the iMac via USB and keeping everything digital. However if inputting was not as important as outputting, you could simply write your tracks as audio in your burner (assuming you have one), then record from a standalone CD player using its optical out into the minidisk optical in.

I have a Roland UA-30, and with OS 9.1 it seems to work very well. Wasn't so hot with OS 9.0.4 though..

You don't need all of those USB to SPDIF connectors, if you have a soundcard with a digital out on it, then it would be digital out to digital in and your set. I don't see an advantage of haveing a converter
